Porcine (and other) Problems

So the past month has involved a LOT of reading. I’ve been trying to figure out the best way to source my meats for the dinner and I figure I have a porcine problem. I need to get hold of, at least, a belly of pork. With this I can cure my own bacon, needed for placing on a roast bird and wrapping pigs in blankets (as well as a cheeky bacon roll in the morning). I could also make other things like Pancetta to add flavour to dishes and I could particularly do with the fat from the belly to prevent game dishes becoming dry.

Other problems would be the goose. My initial hope was that I’d learn to shoot and be able to kill my own. The problem with this is that I don’t think I’ll become a good enough shot, simply because I’ve never shot a gun before. This means that I’m going to have to either barter with someone for the pig and the goose, or I’m going to have to make money to purchase one. I can’t help feeling that the latter is a bit of a cop out… thoughts anyone?

Another problem has been my plums. My attempt at dehydrated plums ended with a bag full of mould… back to the drawing board.
